Lycopene has two properties

The highly unsaturated structure of lycopene leads to its poor stability, so lycopene is prone to oxidative degradation and cis-trans isomerization during processing. Microencapsulated lycopene powder readily penetrates the hydration layer of the small intestinal cell wall and directly contacts the gastrointestinal epithelial cells, thereby facilitating absorption. It is also transported and absorbed through paracellular compartments and M cells in the small intestine wall (in lymph nodes (PP).
