Production Process
Lycopene is an oil-soluble carotenoid that is insoluble in water, which limits its range of applications.
It is unstable, has poor water solubility and low bioavailability. Making lycopene into microcapsules can not only improve its bioavailability, but also improve its stability, which can greatly improve the bioavailability.

Function
Lycopene has two properties
1. Easy to oxidize. Light, temperature, contact with oxygen, pH reduction and the action of surfactants can degrade lycopene; acid has a strong destructive effect on lycopene, and alkali has little effect;
2. Isomerization. Lycopene has 72 cis isomer structures. During storage and preparation, the loss of lycopene is mainly due to oxidative isomerization and degradation.
Lycopene is not only easy to oxidize, but also easy to isomerize. The highly unsaturated structure of lycopene leads to its poor stability, so lycopene is prone to oxidative degradation and cis-trans isomerization during processing. Microencapsulated lycopene powder readily penetrates the hydration layer of the small intestinal cell wall and directly contacts the gastrointestinal epithelial cells, thereby facilitating absorption. It is also transported and absorbed through paracellular compartments and M cells in the small intestine wall (in lymph nodes (PP).
