Ruan Ming and others studied the effect of two-way solid-state fermentation of astragalus on the transformation of astragaloside IV. The changes of astragaloside IV before and after fermentation were analyzed by HPLC. The results showed that astragaloside IV disappeared after the fermentation of astragalus, and a new component was produced. The new component was isolated and identified as 6-O-β-D-glucosyl-cycloastragenol, which had significant antioxidant effects and enhanced the efficacy of astragalus. The study also found that when the content of astragalus in the culture medium reached 40%, the transformation of astragaloside IV was relatively complete, and the transformation rate of astragaloside IV reached 97.7%.
