Allulose powder is a six-carbon sugar with very low content in nature, and it is the epimer of D-fructose at the C-3 site. Allulose is not easy to be digested and absorbed, provides little energy for life activities, and is a very useful low-calorie sweetener.

What is allulose powder?

Allulose is an epimer of fructose, a monosaccharide that occurs in small amounts in nature, also known as rare sugars. Allulose was first discovered in wheat more than seventy years ago, and later in raisins, dried figs and brown sugar. In 2015, allulose received FDA approval for use in baked goods, confectionery, sweet sauces, dairy products, ice cream, desserts, beverages, and more.

The biggest advantage of allulose over other zero-calorie natural sweeteners is that its properties and functions are similar to sucrose, and it is safe enough to be similar to "sugar", so it can also achieve excellent performance in other applications.

What are the advantages of allulose?

(1) Low heat. The calories of allulose are much lower than that of sucrose, 0-0.2 Kcal/g, and the glycemic index is 0.

(2) Neutral sweetness. The taste of allulose is close to that of sucrose, and the sweetness is also similar to that of sucrose, about 70% of the sweetness of sucrose.

(3) High food safety. Allulose was approved by the FDA as a GRAS (Generally Recognized as Safe) substance back in 2011.

(4) The browning reaction characteristics are good. Unlike many other sugar substitutes (such as erythritol), allulose is one of the few sugar substitutes that produces a Maillard reaction and can therefore be used in some foods that require a high temperature reaction. For example, it can not only form a better cross-linked structure through the Maillard reaction with egg white protein, improve the taste, but also produce substances with strong antioxidant effects, reducing the oxidative loss during food processing and storage.

(5) It has a certain physiological effect. D-psicose has been shown to have various beneficial effects on human health. According to reports, it has functions such as regulating obesity and lowering postprandial blood sugar, and can be eaten by diabetics or those who lose weight.
