Maltitol Powder is a white or off-white crystalline powder. Maltitol is derived from Maltose (extracted from Starch) through hydrogenation, similar to other polyols. Unlike other polyols, granulated maltitol does not cause the Maillard Browning Reaction, has a strong sweet taste, and does not require mixing with other sweeteners. Maltitol has no cooling sensation when dissolved in the mouth, can be used in producing many kinds of food instead of sucrose, and can also be used in dairy products instead of fat.

Pure maltitol powder is a colorless and transparent crystal, stable to heat and acid. Since there are no free carbonyl groups in the maltitol structure, no Maillard reaction occurs during food processing. Even if it is heated together with amino acids and proteins, it will not cause the Maillard reaction.

Maltitol is easily soluble in water, insoluble in methanol and ethanol, and insoluble in chloroform and ethyl acetate. 3. Sweetness
The sweetness of crystalline maltitol is about 80%-90% of sucrose, and the sweetness of liquid maltitol is about 60% of sucrose, with a soft and non-irritating taste.

5. Viscosity
