Tea polyphenols are white to tea brown powder solid or crystal, astringent, easily soluble in water, ethanol, ethyl acetate, slightly soluble in oil. Good heat resistant and acid resistance, in the range of pH 2~7 are very stable. Slightly hygroscopic, aqueous solution pH3~4. It is easy to oxidize and brown under alkaline conditions. Green - black compounds are formed when iron is encountered.
