Similarly, the FRAP values increased from 233.2 μmol/L in the untreated sample to 437.5 μmol/L in the fermented sample with Lactobacillus rhamnosus. These findings suggest that microbial fermentation enhances the antioxidant potential of ginger. Conclusion:

The results of this study suggest that microbial fermentation can enhance the antioxidant activity of ginger. This may be due to the production of bioactive compounds during fermentation, such as phenolic acids and flavonoids. Therefore, the consumption of fermented ginger products may offer greater health benefits than unfermented ginger. Further studies are needed to identify the specific compounds produced during fermentation and their potential health benefits.
