2. Vitamin E Content

The composition of vitamin E in the two sunflower oils was the same, but the content of individual vitamin E was different. The content of alpha-vitamin E in high oleic sunflower seed oil is significantly lower than that of ordinary oleic sunflower oil. Beta-vitamin E, gamma-vitamin E, and delta-vitamin E content, with little difference.

The content of α-vitamin E in high oleic sunflower oil was significantly reduced, and the possible reason for this difference is the difference in the study material itself, that is, the difference in genotype.


3. Oxidative Stability

Compared with ordinary oleic sunflower oil, the oxidative stability of high oleic sunflower oil improved by fatty acid is significantly improved. The main reason for this change is the change in fatty acid content. Containing lower linoleic acid and linolenic acid is beneficial to improving oil's oxidative stability. The linoleic acid content of high oleic sunflower oil was 11.06%, which was significantly lower than the 63.42% of ordinary sunflower oil. The oleic acid content of high oleic sunflower oil is 81.23%, which is much higher than that of ordinary sunflower oil, which is 24.94%. According to the research results, the oxidation rate of linoleic acid is about 10 times that of oleic acid. Therefore, the oxidative stability of high oleic sunflower oil was significantly improved due to the increased oleic acid content and the decreased linoleic acid content in the high oleic sunflower oil.

The results showed that, compared with ordinary oleic sunflower oil, the oleic acid content of high oleic sunflower seed oil was 56.29% higher than that of ordinary sunflower oil. The content of α-vitamin E was lower than that of ordinary sunflower oil, and the oxidation induction period was increased by 9.58 h.
