Perilla is an annual herb native to eastern Asia with wild type and cultivated type. It mainly grows in tropical and temperate regions. It has been cultivated in China for more than 2,000 years. The roots, stems, leaves and seeds of perilla can be used as medicine. The whole plant of Perilla frutescens contains 0.5% volatile oil, which contains perillaldehyde, perillyl alcohol, menthone, menthol, eugenol, baixenone and so on. Perilla seeds contain a lot of oil, and the oil content of the seeds is about 50%. The content of alpha-linolenic acid in perilla is the highest among the plants found so far. The content of alpha-linolenic acid in perilla oil is 63% to 70%. In addition, perilla oil also contains oleic acid (about 12%) and linoleic acid (about 15%). Perilla roots, stems and leaves contain vitamins, carotene and anti-aging elements as well as calcium, sodium, magnesium, phosphorus, copper, iron, zinc, manganese, strontium, selenium and other minerals. Perilla seeds contain 25% protein, and its protein contains 18 essential amino acids (higher in lysine and methionine). Perilla seeds also contain B vitamins.
